The Ultimate Centerpiece: 21-Day Dry-Aged Sirloin Joint

The undisputed king of boneless roasting meats. Expertly trimmed down to the tender, deeply marbled eye of the loin, this cut delivers the buttery texture of prime steak alongside the deep, savory richness of a traditional Sunday roast. Aged for a minimum of 21 days, every fiber relaxes to ensure maximum tenderness and a concentrated, robust beef flavor in every slice.

Legend claims an English king was so captivated by this cut’s perfection that he drew his sword and knighted it on the spot: Sir Loin. One taste of the meltingly tender crumb and golden, caramelized crust, and you'll see why the myth endures.

Chef’s Roasting Tips

  • Temper the meat: Pull the joint from the fridge 60 minutes before roasting to bring it to room temperature for an even, wall-to-wall cook.

  • The sear: Rub generously with flaky sea salt, cracked black pepper, and beef dripping or olive oil. Blast at 220°C (425°F) for 20 minutes to render the fat cap into a deep golden crust, then drop the heat to 160°C (320°F).

  • Target temperatures: Aim for 52°C–54°C (125°F–130°F) for medium-rare, or 56°C–58°C (133°F–136°F) for medium.

Serving Suggestions

  • Carve into thick, generous ribbons across the grain.

  • Pair with airy, dripping-crisped Yorkshire puddings, slow-braised red cabbage, and sweet honey-roasted parsnips.

  • Deglaze your roasting tin with robust red wine and beef stock to whip up a rich, glossy bone-marrow gravy.

  • Serve alongside freshly grated hot horseradish cream or a punchy chimichurri to cut through the rich marbling.

  • The golden rule: Rest uncovered on a warm board for at least 20 to 30 minutes before carving. The juices will redistribute throughout the muscle fibers, guaranteeing every bite remains melt-in-the-mouth juicy.
