Lean, richly flavored, and boasting a tight, uniform grain, English silverside is the quintessential centerpiece for a traditional Sunday roast. Because of its dense structure, it holds its shape magnificently, allowing you to carve delicate, wafer-thin ribbons of tender beef without it crumbling on the board.

Chef’s Cooking Tips

  • Keep it blush-pink: Silverside is exceptionally lean, so gentle cooking is essential. Roast low at 160°C until the internal core hits 54°C to 56°C for a juicy medium-rare.

  • Baste and rest: Sear the outside in a screaming-hot pan to build a deep mahogany crust, then baste regularly with butter, thyme, and garlic. Rest under loose foil for at least 20 minutes before carving to allow the juices to redistribute.

  • The ultimate salt beef: Silverside’s dense grain makes it the cut of choice for home-curing. Brine it with bay, black peppercorns, and coriander seeds, then simmer low and slow until it pulls apart with a fork.

Serving Suggestions

  • The Traditional Roast: Slice paper-thin across the grain and pile high beside crisp beef-dripping roasties, airy Yorkshire puddings, and a fiery horseradish crème fraîche, finished with a ladle of rich red wine gravy.

  • Deli-Style Reuben: If cured into salt beef, slice it thick while warm and layer between toasted rye with sharp sauerkraut, melted Swiss cheese, and Russian dressing.
