Butcher’s Cooking Tips

  • Dry the skin thoroughly: Leave the joint uncovered in the fridge overnight before cooking. Dry skin is the secret to blistered, glass-shattering crackling.

  • Score and salt: Score the rind finely across (without piercing into the meat) and massage coarse sea salt into the crevices right before it hits the heat.

  • Low and slow: Roast at 140°C (120°C fan) for 4 to 5 hours until the meat yields completely to a fork.

  • The crackling blast: If the crackling needs a final push, crank the oven up to 220°C for the last 20–25 minutes. Rest the meat uncovered for at least 20 minutes before carving or shredding.
