Prepare for Critical Mass: The Oppenheim-Burger

Some burgers are made for dinner. This one was engineered for an event horizon.

Fresh from the counter, the Oppenheim-Burger fuses premium, coarse-ground beef with a volatile payload: molten, sharp melting cheese laced with an unapologetic strike of blistered chillies. It’s fiery, decadent, and intensely rich—delivering a slow, lingering burn cushioned by pockets of gooey, savoury cheese. Handle with care, cook with conviction, and don’t say we didn’t warn you.

The Perfect Sear: How to Cook It

  • Cast Iron Skillet or Flat Top (Recommended): Get your pan smoking hot. Drop the burger in dry—the fat and melting cheese will self-baste. Sear hard for 3–4 minutes to build an explosive crust, flip once, and give it another 3 minutes. Cover with a cloche or metal bowl for the final minute to trap the heat and supercharge the melt.

  • Over Charcoal: Grill directly over screaming hot coals for 3 minutes per side for that classic smoky char. Move to indirect heat for 2 minutes to let the cheese core fully liquefy without torching the exterior.

  • The Golden Rule: Let it rest on a warm board for 3 full minutes before assembling. Cut into it immediately and you lose the payload.

Build Ideas for the Brave

  • The Ground Zero Smash: Double down on indulgence. Fry up two patties smash-style, stack them with crispy, thick-cut smoked streaky bacon, sweet caramelized beer onions to cut the fire, and a dollop of roasted garlic mayo inside a toasted brioche bun.

  • The Cooling Countermeasure: Tame the fallout. Serve on a toasted potato roll loaded with cool lime-and-coriander crema, crisp gem lettuce, and thick slices of ripe avocado to balance the nuclear kick.

  • The Dirty Loaded Fries: Break up a cooked patty over a tray of hot, skin-on salted fries. Top with pickled red jalapeños, a drizzle of hot honey, and fresh spring onions for the ultimate sharing platter.
