The Butcher’s Best-Kept Secret: Double-Aged Rump Steak

Deeply savoury, intensely beefy, and exceptionally tender. We hang our prime rump on the bone for a full 21 days, then butcher the cut and age it for a minimum 7 days off the bone. That 28-day maturation coaxes out rich, concentrated flavours and a melt-in-the-mouth texture that rivals any fillet or ribeye. Often overlooked, this is the true butcher’s cut.

Chef’s Tips for the Perfect Sear

  • Bring to room temperature: Take the steak out of the fridge at least 30 minutes before cooking. A cold steak drops pan temperature and steams rather than sears.

  • Get the pan smoking hot: Use heavy cast iron. Pat the meat bone-dry with kitchen paper, season heavily with coarse sea salt right before it hits the pan, and sear with a splash of high-smoke-point oil or beef dripping.

  • Baste generously: In the final 90 seconds, drop in a generous knob of butter, crushed garlic cloves, and a sprig of woody thyme. Tilt the pan and spoon the foaming, nut-brown butter continuously over the meat.

  • Keep it medium-rare: Aim for medium-rare (around 52°C–55°C internal) to preserve the juicy tenderness. Rump is lean and muscular—overcooking will dry it out.

  • Rest is non-negotiable: Rest the steak on a warm board for at least 5 to 7 minutes to let the juices redistribute through the fibres.

  • The Ultimate Steak Baguette: Slice thinly across the grain and pile into warm, crusty sourdough [ideally Wallers'] with sweet caramelised balsamic onions, peppery wild rocket, and a sharp horseradish crème fraîche.

  • Bold & Contemporary: Flash-grill over charcoal, slice against the grain, and dress with a zesty Argentine chimichurri or a punchy Thai weeping tiger sauce with fresh mint, coriander, and lime.
