Slow-Braised Lamb Shank

Rich, deeply savoury, and cooked low and slow until the meat simply collapses away from the bone at the touch of a fork. Bathed in its own rendered juices with rosemary, garlic, and sweet roasted root vegetables, this is pure, unhurried comfort on a plate—wholesome, nourishing, and unapologetically rich.

  • Butcher’s Cooking Tips:

    • Brown deeply first: Don’t rush the initial sear. Colour equals flavour—give the shank a good sizzle in hot tallow or olive oil until deeply caramelized on all sides before adding your braising liquid.

    • Keep it gentle: Braise low and slow (around 140°C–150°C) tightly covered. The liquid should barely tremble, not boil, allowing the connective tissue to gently melt into unctuous, spoon-coating richness.

    • Reduce the jus: Once the meat is fork-tender, lift out the shank and rest it warm. Strain the pan juices and simmer them vigorously until they reduce down into a glossy, rich finishing sauce.

  • Serving Suggestions:

    • The Classic Base: Rest the shank proudly atop a mound of buttery, roasted garlic mash or creamy parmesan polenta to soak up every drop of the dark, glossy jus.

    • The Green Balance: Pair with buttered cavolo nero, braised red cabbage, or tender fine beans tossed in sea salt and cracked black pepper to cut through the richness.

    • The Fresh Finish: Scatter a bright scatter of fresh gremolata (finely chopped parsley, lemon zest, and minced raw garlic) over the top just before serving for an aromatic lift.
