Prime, dry-aged Herefordshire beef, coarsely ground and folded with a decadent blend of creamy mozzarella and sharp, mature cheddar.

A fair warning: this is the burger that started it all. Others have tried to mimic it, but there is no substituting prime local beef and real craft.

Our secret isn't just slapping a slice on top at the end. We grate the cheese directly into the beef before hand-pressing each patty. The moment it hits the smoking-hot grill, the mozzarella turns into molten pockets of gold while the mature cheddar crisps along the edges, creating a deeply savoury, toasted-cheese crust that melts through every single bite.
