The Golden Crust: Before roasting, score the thin fat cap lightly in a diamond pattern. Sear it fat-side down in a smoking-hot skillet for 3–4 minutes until deeply browned and crisp before transferring to the oven.

The Herb Crust Option: Brush the seared fat with a thin layer of Dijon mustard, then press on a mixture of blitzed sourdough breadcrumbs, fresh rosemary, thyme, and finely grated garlic.

The Sweet Spot: Roast at 200°C (180°C fan) until an internal thermometer reads 54°C to 57°C for a blushing, tender medium-rare.

The Golden Rule: Always rest the rack on a warm board for at least 8–10 minutes under a loose sheet of foil. This allows the meat fibres to relax, locking in every drop of sweet juice.
