Slow-Cooked Lamb Shoulder

Rich, deeply savoury, and meltingly tender, whole lamb shoulder is the ultimate centrepiece for cold-weather feasting. Beautifully marbled with natural fats that baste the meat from the inside out as it cooks, it delivers far more succulence and depth of flavour than a standard roast leg or shank. Give it time in a low oven, and it rewards you with fork-tender meat that shreds with zero effort, beneath a savoury, crackled exterior.

How to Cook It to Perfection

  • The Low & Slow Method: Rub generously with olive oil, sea salt, crushed garlic, and fresh rosemary. Place it on a bed of thick-sliced onions in a deep roasting tray, pour a cup of dry white wine or rich stock into the bottom, and seal tightly with a double layer of foil. Roast at 150Β°C for 4 to 5 hours.

  • The Finish: Strip away the foil for the final 30 minutes and turn the heat up to 200Β°C to blister and caramelise the crust. Rest it for at least 20 minutes before serving; the meat will pull away cleanly with two forks.

Serving Suggestions

  • The Autumn Classic: Shred straight from the bone over buttery garlic mash or crisp duck-fat roast potatoes, spooning over the pan juices reduced down with a splash of redcurrant jelly.

  • The Flatbread Feast: Pull the spiced meat into warm flatbreads with pickled red onions, pomegranate seeds, fresh mint, and a garlicky tahini-yogurt drizzle.

  • Next-Day Ragu: Toss any leftovers through fresh pappardelle with a grating of salty Pecorino.

Contaminated

The box was smashed to pieces and the curry's I had Burst and contaminated every thig I Orded.Did call immediately and was told it would be sorted.but Nothing DISSATISFIED Joe.

Succulent Lamb

Excellent flavour. When I cook for guests they always comment on the quality of the meat! I use this for a slow roast 4 hour cook…..falls off the bone.
