The Butcher’s Signature Balsamic & Garlic Glaze

For a deeply caramelized, savory-sweet crust that takes these chops to the next level:

  • The Mix: Whisk together ¾ cup balsamic vinegar, ¼ cup soft brown sugar, and 3–4 crushed garlic cloves until the sugar dissolves.

  • The Marinate: Coat the chops generously. Leave them for a minimum of 20 minutes so the tangy-sweet glaze penetrates the meat—though the longer you let them sit, the deeper the flavor.

  • The Cook: As you sear or grill, the sugars and rich balsamic reduce into a sticky, glossy, mouth-watering glaze that clings to every bite.

Chef’s Tips for the Perfect Cook

  • Bring to room temperature: Take the chops out of the fridge 20 to 30 minutes before cooking so they cook evenly throughout.

  • Render the fat edge first: Using tongs, stand the chops upright on their fat strip in a hot, dry skillet for 2 to 3 minutes until crisp and golden brown.
