Bold, Peppery, and Proper: Traditional Dry-Cured Black Pepper Back Bacon

Cut thick from select prime British pork loin and cured the traditional way, our black pepper back bacon isn't your average supermarket slice. We generously crust each loin with coarsely cracked black peppercorns, letting that warm, aromatic bite infuse deep into the meat.

No added water, no white residue pooling in the pan—just rich pork flavour, balanced cure, and a crisp, peppery heat that cuts beautifully through the richness.

How to Cook It Right

  • The Sizzle (Frying Pan): Place rashers into a cold, dry heavy-based pan over medium heat. Let the natural fat render slowly as the pan heats up. Cook for 3–4 minutes per side until the rind crisps into golden crackling and the pepper becomes fragrant.

  • The Crisp (Oven Baked): Lay the rashers flat on a baking tray lined with parchment. Bake at 200°C (180°C fan) for 12–15 minutes for perfectly flat, evenly crisped bacon with zero stove splatter.

Recipe & Serving Ideas

  • The Ultimate Peppered BLT: Stack thick-cut rashers between toasted sourdough layered with salted heirloom tomatoes, crisp crisp gem lettuce, and a generous smear of roasted garlic mayo.

  • Carbonara with a Bite: Dice into thick lardons and fry until crisp. Toss immediately with al dente spaghetti, rich egg yolks, and plenty of Pecorino Romano—the cracked pepper crust provides the signature carbonara punch without needing extra seasoning.

  • Sunday Brunch Stack: Layer over toasted English muffins with poached Clarence Court eggs and a buttery hollandaise. The pepper cuts right through the velvety sauce.

  • Bacon-Wrapped Chicken or Game: Wrap a couple of rashers around chicken breasts or game fillets before roasting; the pepper bastes into the meat while keeping it juicy.

Wow…This is a true flavour to savour. The Marriage of Traditional Dry Cured Bacon with a Black Pepper rind. Once tried, you'll wonder why you never tried it before. This is Awesome, but don't take my word for it. Try it and treat your self.
