Slow-Grown British Turkey Thigh (Bone-In)

Rich, intensely savoury, and naturally juicy, bone-in turkey thigh is the unsung hero of the bird. Because the dark meat stays remarkably tender and the bone locks in essential moisture and flavour during cooking, it delivers a depth that breast meat simply cannot match. Finished with crisp, golden skin, it makes for an exceptional, deeply satisfying centrepiece or weekend roast.

Butcher’s Cooking Tips

  • The Dry-Skin Crisp: Unpack the thigh an hour before cooking and pat the skin thoroughly dry with kitchen paper. Rub the skin with sea salt and a touch of butter or olive oil.

  • The Roast: Sit the thigh on a bed of roughly chopped onions, carrots, and fresh thyme. Roast at 180°C / 160°C fan (Gas Mark 4) for roughly 50–60 minutes (aiming for an internal temperature of 75°C at the thickest part of the meat without touching the bone).

  • The Rest: Rest loosely under foil for 10–15 minutes before carving. This allows the juices to settle back into the grain so every bite remains succulent.

Serving Suggestions

  • Classic Roast Dinner: Carve thick slices and ladle over rich cider-and-thyme pan gravy. Pair with duck-fat roasted potatoes, buttery Savoy cabbage, and sweet roasted parsnips.

  • Slow Braised & Pulled: Braise gently in dark ale or dry cider with garlic, shallots, and bay leaves until the meat melts off the bone. Shred through buttery mashed potato or serve over creamy polenta.

  • Mediterranean Traybake: Roast alongside sweet red peppers, whole garlic cloves, kalamata olives, and baby new potatoes, finished with a squeeze of fresh lemon and torn oregano.
