What is a Butterflied leg of Lamb?

A butterflied leg of lamb is a boned leg of lamb that has been opened and flattened to approximately 5/7cm thickness.

This is a cut of lamb that is so delicious Bar B Q'd once you've experienced the simplicity and flavour when cooked over hot coals, it really does take some beating.

*Chef tip -

Before cooking, slightly score the meat, rub with olive oil and sprinkle with a little salt. Like garlic? Cut some garlic coves, in half - long ways, and insert them in to. 

Fancy a simple marinade?

Squeeze the juice of a lemon in to a mug or cup, add a good glug of olive oil, half a T/Spoon of salt, dried rosemary and garlic chips to the mug or cup of lemon and stir it well.

Now pop the lamb in a bowl, pour over the marinade, rub it in turning a few times and cover. Now, pop it in the fridge and leave for a minimum of 4 hours, but over night is best! Cook as you would normally and stand back and take the praise.
