Tender, succulent, and rich with natural flavour, a butterflied leg of lamb is the ultimate centerpiece for feeding a crowd of six or more. By skillfully removing the bone and opening the cut to an even thickness (around 5–7 cm), you get the best of both worlds: a deeply caramelised crust on the outside and juicy, melt-in-your-mouth pink meat at the center—in half the cooking time of a traditional roast.

Whether you sear it over sizzling charcoal on the barbecue or roast it hot and fast in the kitchen oven, it delivers effortless, high-reward dining every time.

The Overnight Herb & Citrus Marinade

  • 1 whole lemon, juiced

  • Generous glug of extra virgin olive oil

  • 4 garlic cloves, crushed or slivered

  • 1 tbsp fresh rosemary, finely chopped

  • 1 tsp flaky sea salt and cracked black pepper

Lightly score the fat cap in a diamond pattern so the flavours penetrate deep into the meat. Rub the marinade all over, cover, and chill for at least 4 hours—or overnight for the deepest flavour. Bring the meat to room temperature 30 minutes before cooking.

How to Cook It

  • In the Oven: Preheat your oven to 200°C (180°C fan). Place the lamb flat on a sturdy roasting rack set over a tray. Roast for 35–40 minutes for a blushing medium-rare, or 45 minutes for medium.

  • On the Barbecue: Sear over direct, high heat for 6–8 minutes per side until charred and blistered. Move to indirect heat, close the lid, and cook for another 20–25 minutes until the internal temperature reaches 55°C–58°C.

  • The Golden Rule: Always rest the meat under loose foil for 10–15 minutes before carving. This allows the juices to settle back into every fiber.

Serving Suggestions

  • Carve into thick, tender slices against the grain and drizzle with fresh chimichurri, bright salsa verde, or classic minted yogurt.

  • Serve alongside crisp, rosemary-roasted sea salt potatoes and a charred Mediterranean salad of grilled peppers, crumbled feta, and rocket.

  • Warm flatbreads, pickled red onions, and roasted garlic hummus make it an incredible build-your-own feast for casual entertaining.

Amazing flavour, Amazing product

This was cooked on a BBQ rotisserie and so it bathed in its own juices. No better way to cook this joint! It was devine and enjoyed by all. Knowing it is produced locally and prepped by a dedicated team of butchers only added to the eating experience. If you are eating less meat for the climate, eat quality meat like this when you do! Thank you!
