A perfect roasting bird.
Having a far greater amount of fat than chicken yet less than goose roasted ducks really do take some beating! The meat is subtle with a gamey edge, but not dry on the pallet like other game birds can be, meaning the meat is tender flavourful and the skin, that just crisps perfectly.
Unlike commercial ducks, ours are hung to allow the natural flavour to mature naturally, resulting in a honest and distinct develop a depth of flavour.
Portion guide 1 x 2kg duck will serve around 4/6 people.
